Simple Grilled Cheese is Simply Delicious

Since you’ve been sticking around the house lately -- and honestly who hasn’t been, given the current circumstances -- things tend to go a little easier when you keep it simple at lunch time. How about a classic grilled cheese? Yummy, easy, comforting and the kids love it! 

Pop Shoppers know that few things are simpler or more satisfying to make -- and eat! -- than a grilled cheese. Here is a delicious recipe for healthy grilled cheese sandwich, plus one that’s just plain fun and a Pop Shop favorite!

“Light” Grilled Cheese Sandwiches

Prep time: 11 minutes. Makes 4 sandwiches.

8 slices bread (whole-wheat or multigrain- any kind will do- you choose your favorite!)

8 teaspoons light butter (light or reduced-fat) or 8 teaspoons margarine (light or reduced-fat)

6 ounces low-fat cheddar cheese (nonfat or reduced-fat) or 6 ounces American cheese, thinly sliced (nonfat or reduced-fat)

Butter cooking spray (if desired)

Arrange bread slices on flat surface. Spray 1 side of each slice with butter cooking spray or spread with 1 teaspoon of the light butter or reduced-fat margarine. Prepare four sandwiches with the cheese inside.

Heat large nonstick skillet or griddle over medium-low heat and place sandwiches in it. Cover with a lid to make sure that the cheese is completely melted. Cook for about 3 minutes on each side, or until bread is toasted and cheese is melted. Cut each sandwich in half. Serve hot.

The “Arlington” - A Real “Pop Shop” Classic! 

Prep time: 20 minutes. Makes 4 sandwiches.


8 slices bread (sourdough works best) 

8 teaspoons butter 

8 slices or two cups shredded cheddar cheese 

1½ to 2 cups of Mac’ N Cheese (of your choice), warm

Butter cooking spray (if desired)

**Add bacon bits for a little extra “something-something” 


Arrange bread slices on flat surface. Spray 1 side of each slice with butter cooking spray or spread with 1 teaspoon of butter. Prepare four sandwiches with the cheddar cheese. Top with a scoop of mac n’ cheese (and bacon bits if desired) and spread evenly over the cheese.  

Heat large nonstick skillet or griddle over medium-low heat and place sandwiches on it. 

Cover with a lid to make sure that the cheese is completely melted. Cook for about 3 minutes on each side, or until bread is toasted and cheese is melted.

Cut each sandwich in half. Serve hot.
